The Spice Care Guide

Spices are delicate. Their flavor comes from essential oils that can fade if exposed to the “Big Four” enemies: Heat, Light, Air, and Moisture. Follow these simple steps to ensure your spices stay potent and aromatic for months:

While spice racks look beautiful on a countertop or near a stove, the heat and sunlight will quickly "kill" the flavor.

  • The Rule: Store your jars inside a closed pantry or drawer away from the oven or microwave.
  • Why: Sunlight bleaches the vibrant color of Red Chilli and Turmeric, while heat dries out the oils in Cardamom.

Oxygen is the enemy of aroma. Once a spice is exposed to air, it begins to lose its punch.

  • The Rule: Use glass jars with airtight seals or high-quality BPA-free tins.
  • Why: Glass is non-porous and won't absorb the scents of the spices, keeping the Onion and Garlic powders from clumping or losing their zing.

This is the most common mistake. Never shake a spice jar directly over a steaming pot of food.

  • The Rule: Use a dry spoon to scoop out the spice, or pour the required amount into a small bowl first.
  • Why: Steam enters the jar and causes powders (like Sattu, Onion, and Garlic) to turn into hard lumps and can even lead to mold growth.

Spices don't necessarily "spoil," but they do lose their "soul."

  • Whole Spices (Cardamom): Can last up to 2–3 years if stored correctly.
  • Ground Powders (Turmeric, Chilli): Are best used within 6–12 months for peak flavor.
  • The Test: If the color looks dull or you have to "search" for the smell, it’s time to replace them with a fresh batch from our collection!

Because Sattu is a roasted flour, it contains natural oils that can turn rancid if kept in a hot, humid environment.

  • The Rule: For long-term storage, keep Sattu in a sealed container in a cool area. If you live in a very humid climate, you can even store it in the refrigerator.

"A spice is only as good as its aroma. Treat your spices with care, and they will reward you with extraordinary meals."
